Limes entered 2026 at a network average of $50/case. By March, the average had climbed to $78. The highest recorded case price in the network hit $135.64/case by end of March. Nearly 3x where the year started.
April was the worst month on average: $83/case, with 90% of operators purchasing above the market midpoint. Restaurants with lime-heavy menus, ceviches, cocktails, salsas, absorbed the full hit with no visibility into whether their price was normal or not.

Éxodo Hospitality Group runs four concepts in Chicago: Kayao, Ayayay, Matilda, and Akiro. 180 employees, over $1.1M in annual purchasing. Each venue had its own chef, its own vendors, its own ordering rhythm. No one had the full picture.
